Bot Chien is the Vietnamese version of fried rice flour cakes. It is similar to Chai Tow Kway in China. The rice flour cakes are sticky, thick, and starchy. In Vietnam, the rice flour cakes are often made of just rice flour and tapioca starch. The cakes are then sliced into little cubes or rectangles, fried in a flat pan with great amount of oil until it turns from white to crispy and golden brown on the outside, then topped with eggs to make the dish more delicious and colorful. While the eggs sizzled and bubbled away, then Bot Chien is topped with sliced green onions, some extra pork cracklings, and finally a dash of salt and pepper. You can enjoy Bot Chien with the fresh green papaya and the dark sauce which is slightly sweet, salty and sour. All these flavors blended with each other make the dish better. You can dump the entire bowl of sauce onto the Bot Chien or add it sparingly on each bite. It is a special feature, only Saigon street foods.

Banh Trang Tron is basically a junk food, but very popular with young people, especially high school and college students because it is cheap and available. Banh Trang is the thin rice paper. Banh Trang Tron is a snack of shredded rice paper, seasoned with a chili sauce, and filled with herbs like Vietnamese coriander and basil, supplemented with pieces of squid, dried beef, and quail eggs, and usually served in a plastic bag. There are probably about more ten ingredients in the mixture. There is nothing better to do when socializing at night than to chit-chat with your friends, have some drinks and eat some snacks; and Banh Trang Tron is a good choice for you. It’s served all places in Saigon, for example in some Saigon famous social hangout spots, Notre Dame Cathedral and Turtle Lake, etc.

Finally, I could not write this post about the three of the best Saigon Street Food without including Bo La Lot. If I have to choose 1 food to put into the list of Saigon Must-Eat Street Food, it would probably be this. Bo La Lot is available throughout Saigon and common for dinner. This food is quite cheap and delicious.  Bo La Lot are minced beef rolls which are lightly spiced and seasoned, filled and tightly wrapped into La Lot, or wild betel leaves. Then, they are put over the charcoal grill with a pretty hot heat to cook through the middle, but are slightly charred on the outside and have an undeniable smoky flavor. A plate of Bo La Lot is always served with rice paper, many kinds of leaves and herbs, and Mam Nem, a dipping sauce which is made with fermented fish sauce and chilies. I think your mouth would be watering when you read this.
